This soil Pouilly Fuissé is the most prestigious of Macon. The vines are over 50 years old are exposed on sunny slopes facing southeast village of Fuissé, Pouilly and Vergisson. This selection was made in order to obtain a rich wine, balanced, powerful and full. Vines Fuissé bring a side floral wine, Pouilly bring those in power and those Vergisson minerality. The name of the wine comes from an old French expression, meaning that grapes should be picked in Fullness of Goodness: fully ripe and good.
The grapes are pressed and the clarified wort at low temperatures. The wine is made in oak barrels (30% new) where to place the alcoholic and malolactic fermentations. Breeding is done in barrels on lees and extends for about a year.

Tasting Notes
Much elegance to this wine with aromas of fresh fruit and subtle oak. The nose is mineral and a beautiful expression of fruit. The palate is well balanced, round and generous. The finish is lively and intense. We advise to wait 6 months to a year after bottling, before starting to eat (often better after 1-2 years of aging).
